Easy cooking – Roast Chicken Recipe

This is a fantastic method for obtaining a flavorful, juicy roast chicken.

Herby oil dressing, crispy sliced potatoes, and roast chicken.

Serves 4





Ingredients

For Roast Chicken

  • 1½kg whole chicken
  • 1½ tablespoons olive oil, squeezed from 1½ lemons
  • 3 peeled and smashed garlic cloves
  • ½ tablespoon chopped rosemary leaves, freshly ground black pepper, and salt

For the potatoes

  • 1.2 kg potatoes,
  • 1 onion, peeled, thinly sliced, chopped,
  • 2 tablespoons of butter, melted,
  • 200 milliliters of stock or water

For the herby oil dressing

  • 1 lemon's zest
  • 100ml of olive oil
  • 1-2 finely chopped garlic cloves
  • Finely chopped flat-leaf parsley,
  • Loads of black pepper,
  • Salt

Cooking Process

  1. Set oven temperature to 180°C/gas mark 4.
  2. One tablespoon of olive oil, lemon zest and juice, garlic, rosemary, and black pepper are combined to make the marinade. Transfer the chicken to a sizable platter and drizzle with the marinade. If at all possible, let the marinade sit in the refrigerator for the entire night.
  3. In a large bowl, combine the potatoes, onion, butter, rosemary, salt, and pepper; stir thoroughly. Scatter them across the bottom of a big roasting pan. Drizzle the water or stock over top. With the skin side up, place the chicken on top. Add some salt for seasoning. Pour the leftover ½ tablespoon of oil onto the chicken.
  4. Roast, uncovered, for 1 hour or until the juices flow clear in the preheated oven. Take out of the oven, cover with foil, and give it ten minutes to rest.
  5. Mix all of the dressing ingredients while the chicken is frying. If needed, adjust the seasoning by tasting it.

Serve

Cut the chicken into quarters or slices, then pour some dressing on top. Serve with the leftover dressing, some soft-stem broccoli, and the potatoes.
